What juicy oven-roasted chicken is

Oven-roasted chicken is bone-in, skin-on chicken pieces cooked in a hot oven until the skin is golden and crisp and the meat is cooked through but still moist. It is the most common home-cooked lunch in half the world, and in Chile it comes with potatoes, rice or ensalada chilena. The juicy version in this recipe uses thighs and drumsticks (more fat and collagen than breast), a rub of oil, garlic, paprika, oregano and lemon, a bed of onion with 100 ml of stock that adds steam, 200 °C for 35-40 minutes and a 5-minute rest. Doneness is checked with a thermometer: 74 °C in the thickest part of the thigh.

Instructions

  1. Pat the skin dry and rest at room temperature

Pat each piece dry with kitchen paper on both sides, especially the skin: moisture is what stops it from crisping. Leave the pieces on a plate for 20 minutes out of the fridge while you make the rub and the oven heats up. Chicken straight from the fridge goes into the oven with an ice-cold centre, and the skin burns before the inside is cooked.

  2. Marinate the pieces with garlic and paprika

In a bowl, mix the olive oil, salt, pepper, paprika, oregano, crushed garlic and lemon juice into a loose paste. Coat each piece all over and push a little of the rub under the skin, lifting it gently with your fingers without tearing it off: the meat gets seasoned underneath and the skin stays coated only with the oily part, which is what browns it.

  3. Set up the tray on a bed of onion

Preheat the oven to 200 °C (390 °F), top and bottom heat, no fan. Spread the onion wedges and the strips of lemon zest over the bottom of a roasting tray or oven dish where the pieces will not be crowded, and pour in the stock or water. Lay the chicken on top, skin side up and not touching: if the pieces touch, the steam they release softens the skin. The onion lifts the chicken out of the liquid and catches the juices that drip down.

  4. Cook in the oven for 35-40 minutes, basting halfway

Cook on the middle shelf for 35-40 minutes. After 20 minutes, pull the tray out briefly and spoon the pan juices over the pieces; return it uncovered. If the bottom dries out early, add 2-3 tablespoons of hot water. Do not turn the pieces: keeping the skin facing up the whole time is what makes it crisp.

  5. Measure the temperature in the thigh

Push a kitchen thermometer into the thickest part of the thigh without touching the bone: at 74 °C (165 °F) the chicken is cooked through and still juicy. Without a thermometer, pierce the thigh with a knife: the juice should run clear, never pink. If the temperature is right but the skin lacks colour, raise the oven to 220 °C (430 °F) or switch on the grill for 3-5 minutes, watching it, and no longer.

  6. Rest for 5 minutes

Take the tray out and leave the pieces for 5 minutes loosely covered with foil (seal it tight and the steam softens the skin). In that time the juices settle back into the meat and do not run out onto the plate when you cut: that is the difference between juicy chicken and dry chicken.

  7. Serve with the pan juices

Tilt the tray and spoon off the fat floating on top; what is left underneath, with the softened onion, is the sauce. Serve 2 pieces per person with that onion and a spoonful of juices over the top. Pair with potatoes, rice or a fresh salad.

Foodtastico Tip

Store the cooled pieces with their juices in an airtight container, up to 3 days in the fridge. To portion the week, pull the meat off the bone and shred it for salads, sandwiches or a stir-fry. Reheat in a 160 °C oven with a little stock, never the microwave.

Frequently asked questions

Why does roast chicken turn out dry?

Almost always for one of three reasons: using skinless, boneless breast (it cooks in 20 minutes and is dry by 30), cooking at a low temperature for a long time (at 160-170 °C the chicken loses water before it browns) or cutting it without resting. Bone-in, skin-on pieces at 200 °C for 35-40 minutes plus 5 minutes of rest solve all three. A thermometer stops you overcooking: at 74 °C in the thigh it is done.

Breast or thigh for roast chicken?

For juicy chicken, thighs and drumsticks: they have more fat and collagen, they stand up to 40 minutes in the oven and the skin protects the meat. Breast works if it is bone-in and skin-on and comes out earlier, at 25-30 minutes (72-74 °C in the centre). If you mix pieces on the same tray, add the breasts 10 minutes after the thighs so everything finishes together.

What temperature and how long for each type of chicken piece?

At 200 °C: bone-in thighs and drumsticks, 35-40 minutes; wings, 25-30 minutes; bone-in, skin-on breast, 25-30 minutes; boneless breast, 18-22 minutes. In every case doneness is set by an internal temperature of 74 °C, not by the clock: an oven that says 200 °C but runs cooler than it claims may need 10 minutes more.

Can I roast potatoes on the same tray?

Yes. Cut 600-700 g of potatoes into 2 cm wedges, toss them with a tablespoon of oil and salt and put them on the tray 10 minutes before the chicken, because they take longer. Then arrange the pieces on top of or between the potatoes, skin side up. The potatoes cook in the chicken juices; if they end up soft, raise the oven to 220 °C for 5 minutes at the end.

Does the same recipe work for a whole chicken?

Yes, with the same ingredients and the same temperature. A 1.6-1.8 kg chicken at 200 °C takes about 1 hour 15 minutes, breast side up, basted every 25 minutes. Check for 74 °C in the thickest part of the thigh, not the breast, and let it rest for 10-15 minutes before carving.

How do I reheat roast chicken without drying it out?

In a 160 °C oven for 12-15 minutes, in a dish with 2-3 tablespoons of water or stock and covered with foil for the first 8 minutes; uncover at the end so the skin gets some of its texture back. In the microwave the skin loses its crispness: if there is no other option, 2 minutes on medium power, covered and with a splash of water.

Can I marinate the chicken the day before?

Yes, and it improves. Rub the pieces, keep them covered in the fridge for up to 24 hours and take them out 20-30 minutes before cooking to lose the chill. If you do this, hold back the lemon juice and add it just before the oven: acid over many hours softens the surface of the meat and changes its texture.

Can I make juicy roast chicken in an air fryer?

Yes: 4 pieces per batch at 180 °C for 22-25 minutes, skin side up, turning them only if the underside is still pale at 15 minutes. No stock or onion needed. Check for 74 °C just as in the oven and rest for 5 minutes. The skin comes out even crisper; what you lose is the pan sauce.
