Pablo makes and tests the recipes published on foodtastico in his own kitchen. That is where the real timings, the quantities in grams and cups, and the mistakes flagged on each page come from, including the times something went wrong and had to be repeated.
He cooks mostly Chilean and home cooking: pan amasado, empanadas de pino, pastel de choclo, traditional desserts and everyday meals. If a recipe does not hold up at the table, it is not published; when it improves, the page is updated and its modified date changes.
