  1. Cut the potatoes into even 1 cm sticks

  3. Dry completely with a towel or paper towels

    Drain the sticks and dry them thoroughly with a clean towel or paper towels, one by one if needed. This is the most common mistake: wet sticks drop the oil temperature, splatter, and produce limp fries instead of crispy ones.

  4. First fry: 6 minutes at 150 °C

    Heat the liter of oil to 150 °C in a wide pot and fry the sticks in small batches for 6 minutes, without letting them brown. This stage only cooks the inside; if you overcrowd the pot, the oil cools down and the fries absorb grease.

  5. Rest the sticks for 10 minutes on a rack
