Sourdough in 4 steps

The clearest guide to making your first sourdough bread without the hassle.

  1. Build the starter

    Mix whole-wheat flour and water in equal parts. Refresh every 12 h for 5 days.

  2. Float test

    Drop a spoonful of starter into water. If it floats, it is ready to bake.

  3. Knead and fold

    Incorporate the starter into bread flour. Apply stretch-and-fold every 30 min for 3 h.

  4. Steam bake

    Bake in a Dutch oven at 250 °C for the first 20 min with the lid on; uncover and brown for 25 min.
